Nothing is more comforting in cold weather than an interesting book, a warm afghan and the intoxicating aroma of homemade soup simmering on the stove. Most of the time I don't know exactly what kind of soup will result when I first start out. I simply begin with whatever kind of meat or poultry is in the freezer and gradually add whatever vegetables, seasonings, rice or pasta I have on hand. The final soup is always satisfying and delicious.
Leftover pot roast makes a quick and easy beef stew. Simply thin leftover gravy with some beef broth, add leftover pot roast cut into small chunks, a couple of bay leaves, a few potatoes, carrots and any other vegetables you have on hand. Simmer until vegetables are tender. Season with a handful of fresh herbs, remove bay leafs and serve.
Instead of serving in bowls, try making individual bread bowls. They are simple to make with canned refrigerated biscuits. Using a Spray Mister, spray an inverted muffin pan with olive oil. Roll out each biscuit and shape over inverted muffin pan. Bake in 350oF oven for approximately 10 min. or until golden. Allow to cool slightly and then remove to wire cooling rack to cool completely. Fill with soup and garnish with a sprig of your favorite fresh herbs or chopped green onions.
If you have members of your family who refuse to eat vegetables, try this trick. After the vegetables are tender, place in them in a blender with some broth and blend until smooth. Add the mixture back into your soup. Season as usual. The result will be a thicker, more healthful soup and your family will never know. This trick also works well when making gravy.
Be adventurous when preparing soup. Soups are a great way to try vegetables you've never tasted before. Substitute asparagus for green beans or turnips for potatoes. Sweet potatoes are filled with nutrition and make a flavorful addition. Try adding pureed beets for rich color and flavor. Experiment with different herbs and spices to reduce the need for salt. Soup always tastes better the next day, so be sure to make enough for leftovers. It also freezes well for times when you need a quick meal. Preparing soup does not always require a specific recipe.
